Chorizo Fritata

It looks like I'm going to have a few recipe blips on here!

I made this chorizo fritata for the first time today. I really wanted a blip of it just as it came out of the oven, but I had cut a big slice out of it before I remembered! Really tasty and pretty simple to make:

You will need:
180g peled chorizo sausages, cut into bite sized pieces
a big glug of olive oil
8 boiled new potatoes, diced about 2cm
8 eggs
2 teaspoons paprika
2 tablespoons soured cream
4 spring onions, finely sliced

Preheat oven to 170C/150C fan/gas mark 3-4

Use a squareish non-stick pan, about 25cm in diameter. On the hob pour a glug of olive oil in and heat, add the chorizo and cook till it's lightly coloured. Remove the chorizo, put to the side. Use the same oil and fry the potatoes in the same pan, again till they have a slight colour to them. Once this is done, put the potatoes with the chorizo and clean the pan.

Crack the eggs into a bowl and whisk. Add 1 teaspoon of paprika and 1 tablespoon of soured cream and whisk together.

Make sure the pan is greased, or line it with some paper to stop the fritata from sticking. Put the chorizo, potatoes and the spring onions in making sure the ingredients are evenly spread over the pan, then cover with the egg mixture.

Stick it in the oven to bake. It will turn a lovley golden colour when it's ready and will be firm to touch in the middle. Mine took about 15-20 minutes today.

Serve dusted with paprika and another dollop of soured cream, with a nice salad. Tasty!

Other than that today was a pretty relaxing day. I had a long lie, took the wonderbeast out, had coffee with the girls and did a Tesco shop. Watched the new Wolverine movie on dvd tonight once Av got home from work and I'm just finishing off a nice glass of wine before heading off to bed!
