Homemade veggie tagine with lemon and ginger tea

I'm going to be honest, today I felt pretty hungover. After one too many Belgian beers out in town last night, I was feeling a wee bit shaky. In effort to remedy my hungover state I decided I needed something healthy for dinner, so I made a tagine. It was pretty easy! I fried some onion and garlic in olive oil with some ras-el-hanout spices. I then threw in a tin of chopped tomatoes, a variety of chopped vegetables (today I used squash, courgette, carrot and mushroom) and a tin of chick peas. Lastly, I topped everything up with water and left it to simmer until the veggies were cooked. Yummy!
