My favourite cheese

My favourite cheese (today, at least) is a Single Gloucester that is sold at a stall in our farmers' market, which was today. She sells only Single and Double Gloucester cheese. The single is exquisite. It's not trying to be anything fancy, it's not a challenge to eat, or self-important, or a status cheese - it's just itself and quite simply delicious. If you want to know the difference between single and double, single has less fat content, the double is yellower and traditionally coloured from the flowers of Lady's Bedstraw. Double is also found in unremarkable slabs in every supermarket, whereas single is much rarer.
