Roast Chicken

Last night continued well into this morning and so a walk down by the river was required. The hail wasn't.

Anthony Bourdain's roast chicken.

Chop a clove of garlic as finely as you can and mash it into some butter. Using a teaspoon work the garlic butter under the skin of the chicken, starting from the neck end. Stuff it with a couple of onions and put it in a baking tin with lots of salt and pepper and half a glass of white wine. Put it in the oven. Sorted.
