Roast Veggies to be

Had friends round tonight at teatime and thought this might be a colourful blip.
I basically used the veggies I had in the fridge for this one: sweet potato, carrot, swede, red onion, shallots size onions, and a few cherry tomatoes. Seasoned with salt, pepper, cumin, rosemary & thyme, and tossed in olive oil. I also threw in some spinach about 10 minutes before the end of the cooking time, so the result was more colourful, but the photo wasn't so good.
