Maple Sugaring Time

We are edging ever closer to spring. In February the Maple Syrup producers hook up these taps and lines to get the Maple sap out of the trees. The combination of warm sunny days and cold nights gives the best results. Keep in mind that "warm" is a relative term. They hope for the 30's (F) or 2C. When it gets too warm, the sap gets bitter. Today is a beautiful blue sky day. Melting going on and lots of icicles dripping from the roof.
