Beetroot & Chickpea Fritters

I've been frittering away my dinners lately. Courgette & Corn fritters last night and these tasty Beetroot ones tonight.

My fritters aren't quite as pink as I expected. It's because when I cut into my beetroot tonight, I discovered it was a chioggia beet, the pink & white candy-striped beet. Still worked nicely in the fritter tho' was a mellower flavour. We ate them in a wrap with lots of salad, yoghurt, coriander and a squeeze of lemon.
