Puerco Pibil

Had a very hearty dish frm the yucatan this evening. Recipe from Robert Rodriguez on the Once Upon a Time in Mexico DVD. It's well tasty and as it's roasted for 4 hours in a low oven the pork just pulls apart. The main spice is Achiote which I don't get to use as often as i'd like and it's always a good excuse to have to buy a bottle of tequilla.

Watched Transformers: Revenge of the Fallen later on, I really like it, much less human interest than the first one and much more robots kicking ass!
