Surplus bonanza!

I've been blipping a series of images relating to our surplus food cafe in Fishguard where we collect, sort, cook and serve edible 'waste' that would otherwise go to landfill.

Here is the result of particularly successful haul by our 'acquisitions' supremo who has built up good contacts with local wholesale and retail businesses, persuading them to put aside for us the stuff which is past its prime or 'best before' date rather than chucking it into a skip. Sometimes the pickings are slim but on red letter days like today we have a bonanza.

This lot was listed as follows:
12kg dried apricots
28kg pickling onions
1kg peeled garlic - frozen
3 pomegranates, need using tomorrow
4kg mangoes, some soft
2.8kg papaya, check for mould
4.5kg cheddar cheese
LOTS brown sauce, Caesar dressing, blue cheese dressing
2kg coarse sea salt
6kg split peas ,2kg lentils, 3kg chick peas
2kg dry coconut
9kg asstd bread flour
11kg Seville oranges, need preserving or freezing or pressure cooking ASAP pls
8 croissants, 1 sliced loaf - frozen


It's hard to think what to do with 28 kg of pickling onions, several huge tubs of brown sauce and all those mouldy papayas but it's amazing what comes out of our kitchen.
For example, on today's menu there was:
Celeriac soup or borscht
Root vegetable gratin
Thai green curry
Pizza
A selection of salads
Pear and plum crumble
Baked bananas
