Piquant

Piquant Peppers.

The heat from peppers varies according to the level of a chemical called capsaicin which is undiminished by cooking and freezing. As well as causing the burning sensation the capsaicin also triggers the brain to produce endorphins which promote a sense of well being. Capsaicin is measured in Scoville units. A harmless bell pepper has a 0 Scoville units. In November 2013 the Carolina Reaper entered the Guiness Book of Records with a top scale of 2 200 000 Scoville units!! Is that even edible??? The derivation of the word piquant is French and literally means prickly. I bet those Carolina Reapers are very prickly.

I wonder what the Scoville rating of these peppers is. I’m not really a fan of chilli peppers so these are destined to go to my big son who uses them all the time in his cooking.
