28th birthday cake

I know, yet another cake ! Celebrating eldest son 28th birthday today,
so I spent most of my afternoon baking and preparing this one :-)

Recipe Dutch Cream Cake
Ingredients:
90 g flour
30 g cornstarch
salt
6 eggs
150 g fine sugar
50 g shaved almonds
fruit for filling/decoration
750 ml whipping cream
icing sugar (about 2 tablespoons)

You do need a greased and floured 24 cm springform


Preparations:
Pre-heat oven to 175 C/ gas 3/ 350 F
Mix the flour, cornstarch and a pinch of salt.
Break eggs in a plastic bowl, add the sugar, put the bowl in a tub with luke-warm water and whip the eggs and sugar with a food mixer for about 10 minutes, until it's thick and frothy.
Pour the flour mix through a sieve on the mix bit by bit, carefully folding it in the mix (be aware that the flour will fall to the bottom of the bowl, so after adding the last bit, do scrape the bottom of the bowl). Pour the mixture in the springform and bake for 40 minutes until golden brown and done.
Switch off oven, open oven door a little bit and leave the cake in the oven for 10 minutes. Then take out of oven, let it cool and take out of springform (leave it on the springform bottom).

Dry-bake the almond shavings for about 3 minutes on medium heat in a non-stick frying pan. Wash and dry the fruit you're using for filling/decoration.
Whip the cream with 2 tablespoons of icing sugar (and possibly some gelatine to keep the whipped cream in shape later)
Cut the cake in half horizontally. Spread part of the cream and fruit for filling on the bottom layer, and if you want you can put some jam on the cut end of the top layer before putting the layers back together.
Spread part of the whipped cream evenly around the side, pour the almond shavings on a plate and carefully roll the creamed side through the almond shavings, holding the cake by the springform bottom and the cake's top.
Then spread cream evenly over the top and decorate with fruit and eventually chocolate decorations.
