Normandy Apple Tart

One lunchtime when I was in France recently, I decided to go into the local village for lunch. The food at the restaurant was good and wholesome.

This is my attempt to recreate the lovely tart that the owner had made. Her pastry was so thin and crisp. I really should have made puff pastry, but enriched shortcrust was a pretty good alternative!
