Paneer Bhurji

Now I shall set out to do something I have no clue how to go about. I can hardly cook. And trying to write a recipe, is very alien indeed. Though this is a simple preparation, it's enjoyable having it with Chapatis(Rotis). It is experimental and a bit improvised, but here goes.

Paneer Bhurji

200 gm paneer (cottage cheese)
2/3 small onions
3 small tomatoes
1 clove of garlic
2 sprigs of spring onion
1 green chilly
Handful of coriander leaves

In a pan of warm oil, stir and fry chopped onions till they are light golden in colour. Then pour in the chopped garlic and spring onion and fry in a lowered flame till the onions turn golden brown. Then add the chopped tomatoes and fry for a while until the tomatoes have released all the watery stuff.

In the meantime, grate the paneer, mix it with salt, a little bit of red chilli powder, chopped green chillies and oregano seasoning. Then pour this into the frying pan. Fry until the paneer has released all the watery stuff. Keep stirring of course.

Finally add a little bit of butter and coriander leaves and give it a good stir. The yummy dish is ready!

Of course if you have violins and silence to accompany you during the task, it becomes all the more enjoyable. Even the smallest of things, like the layers of an onion, the gentle curves separating them, their symmetry begin to appear magical to you.

The result is delicious, especially when you top off the dinner with "Mocha brownie fudge" ice-cream!

P.S. Now when S gets to know the real recipe, I might get banned from the kitchen for some time!
