Plastic Pavlova

In NZ we had LOTS of Pavlova, And very good Pavlova it was too.

Easter Sunday, with the kids round for supper, I made our very own, traditional plastic pavlova (so called because Chris, who gave me the recipe, used a cereal bag instead of baking parchment, and the plastic bag melted!).

On an overnight Cruise in Paihia, Bev and I swapped Pav recipes, so here is mine, documented for posterity (thanks to Chris H.). Sans plastic of course!


Ingredients

5 egg whites
10 oz golden castor sugar
2 tsp cornflour
1/2 tsp vanilla extract
1 tsp malt vinegar


Instructions

Preheat oven to 140C
Beat eggs to peak stage.
Beat in sugar until glossy, then fold in all other ingredients.
Spoon onto baking paper on circular shape and dip in centre.
Place into oven and cook for 1 1/4 hour.
Turn off oven and allow to cool.
Serve on plate filled with whipped cream and fruit.
Cream: 10 fl oz whipped cream or mascarpone or 50/50
Fruit: any fresh fruit - around 1lb or 500g.
