Salsa In The Making

Our activities tonight were centered around Cinco de Mayo, although we should have called it Dos de Mayo because we celebrated three days early. After a Thai chili pepper eating contest, where our winners topped out at 10 chilies, we made salsa.

Each group was given some tomatoes, cilantro, an onion, and 1000 Mexican Pesos. Using the Pesos, the teams bid for the remaining ingredients they wanted to use in their salsas. Then there was a taste test. The winner was a mango salsa with mint and basil. Runner up (and most creative in my opinion) was my team's apple ginger salsa. My Thai friends were surprised at how easy it was to make and how many varieties we came up with. It's a healthy snack too, especially when we started eating it out of spoons because we ran out of chips. :)
