Recipe#1: Lemon-Parsley Pork Chops

Finally, the christmas dinner leftover is gone. So, I can start my food project now! Here is the recipe:

Recipe#1: Lemon-Parsley Pork Chops
(Adapted from Great Food Fast p.299)

1 lemon, zest removed and minced
2 tbsp chopped fresh parsley
1 garlic clove, minced
Coarse salt and fresh ground pepper
2 tbsp olive oil
4 bone-in loin pork chops

1. Combine the minced lemon, parsley, garlic, 1/2 tsp salt, and 1/4 tsp ground pepper in a small bowl. Set aside.
2. Heat the olive oil in a large skillet over high heat. Season the pork chops both sides with salt and pepper. Cook in the skillet until browned, 2-3 minutes per side.
3. Add 1/2 cup water to the skillet; bring to a boil. Reduce the heat to medium-low; cover and simmer gently until the pork is cooked through, 8-10 mins.
4. Transfer the pork chops to a plates; drizzle with the pan juices and sprinkle with the lemon-parsley mixture.

Note: I served this with alfredo pasta.
