Seasonings and spices

A behind the scenes visit to the kitchens of the Peach Tree restaurant this morning, to meet resident culinary wizard Chris Burt,and to photograph the process of preparing of a leg of pork for curing with the spices and seasonings in the photo. It'll be over a year before the proscuitto is ready and I have no doubt it will be worth the wait.
