Sample Time

One of the fun elements of my chosen vocation is the chance to sample coffees from all over the world, many of which we never actually serve at BG because they don't measure up to the standards we wish to maintain. It is always somewhat akin to opening presents at Christmas though when you don't really know what you are going to get. Once these are roasted I'll have to wait while the roasted coffee rests and allows the real flavor to develop, and then every so often I take a sip and think - this one is going to bring something new to what we have - let's hope one of these has what it takes.
