Thai Coconut Chicken Curry

Since our favourite Thai restaurant closed down and was replaced by an inferior one serving dishes with gloopy bottled sauces, we have had to resort to Tom making curries from scratch at home instead. This year we even have a pot of Thai basil to add that certain je ne sais quoi.
