Emergency Dinner

Was aching a bit after yesterday's wedding and feeling distinctly lethargic today. Spent most of the day working at the PC which suited me as it didn't involve having to move too much. Was hoping to escape to the garden this afternoon for a loll on a deckchair in the afternoon sun but unfortunately had too much work and didn't get it finished until tea-time.

We didn't have much food in the house (no surprise there), but I did have the ingredients to rustle up one of our favourite emergency dinners - roast tomatoes and feta cheese - as featured in today's blip. It's super-easy to make and if you'd like to try it, here's how to make it (for 2):

Put a glug of olive oil in a shallow roasting dish and put it in the oven to heat up. When hot, add a large onion, cut into quarters, toss in the hot oil and put back in the oven for 10 mins. Then add about 8 medium sized tomatoes, cut in half. You can also add a few unpeeled garlic cloves at this point. Gently stir the tomatoes round in the oil to coat them and add a little drizzle extra of oil for good measure. Put the dish back in the oven for 20 mins. Finally add a pack of feta, cubed and a sprig of finely chopped rosemary and one final tiny little drizzle of oil over the cheese, then back in the oven for 10 mins.

We have this with oven baked ciabatta, which you can use to soak up all the lovely, unctuous tomato, olive oil and cheesey juices. Delish!
