The trouble with going away on holiday is that one's brewing can get a bit behind.

However I am pleased to report that things are again bubbling along nicely. The pink jars contain rhubarb and the yellow jars elderflower. All are destined to be the subject of the champenoise method.

A correspondent remarked that it seems quite a lot of trouble to produce a gallon of wine. Even though it is a hobby I do not regard it as too time consuming. The white bucket contains rhubarb chunks that have been slowly frozen. They are simply left overnight to thaw and by the morning the juice will be available to make up the wine recipe.

It is as simple as that.
