Apple Chickpea Pork

I am wary of buying pork from an untested source.
I can taste it if it is tainted by any 'maleness'.

Fortunately, the pork available in Australia has been improving.
Even the big chain stores are promising sow-stall free pork.

This is great with cabbage or sauerkraut:

Brown diced onions and celery and sliced pork loin in a hot pan with olive oil.
Add chunks of cored and peel apple.
Once the apples start to brown, put in a whole star anise and a 1/2 teaspoon of ground coriander.

Add beef or chicken stock and allow to simmer for 45 minutes.
