This photo was taken by daughter Zoe of the cake that she made for us all tonight. It is an Annabel Langbein recipe - a familiar name to our NZ blippers I'm sure.

A coconut and biscuit base topped with strawberry mousse and then set in the freezer, drizzled with raspberry coulis from our own raspberries (were frozen - not picking now ).

It was quite sensational actually and Zoe says very easy to do.

Keeps in the freezer for 4 weeks.

Yeah, right.

No chance.
