A fine lamb biriyani

No food in the house when Miss K and I returned from France so we tried the new Indian in town. I usually measure an Indian by its biriyani and this one arrived in a clay pot coveted with a pastry lid. Traditional method in India, I was told, and it was well spiced and moist, with the soft lamb having that soft texture which only comes with long, slow cooking. Obviously "finished off" for me from prepared components but quite excellent!
