Soup

I've not blipped any food or recipes for a while, so her is today's recipe:

Chickpea, roasted tomato and garlic soup.

500g chickpeas (I used a tin and a half for easyness)
1kg tomatoes
1 bulb garlic
75ml olive oil
2 tbsp dried oregano
2 leeks
4 cups stock
2 tbsp tomato puree
salt and pepper

Preheat the oven to 200C. Half the tomatoes, cut the top off the garlic bulb and place them all in a baking tray. Drizzle with olive oil, sprinkle with salt, pepper and oregano and roast for 20-30 minutes.

After 20-30 minutes puree the tomatoes and 5 of the garlic cloves.

Heat some oil and sautee the leeks for 3 minutes. Add the stock, bring to the boil then reduce to simmer.

Add the tomato mixture, tomato puree and the chickpeas, season with salt and pepper and heat.
