Eggy with his present for Katrina

Eggy commissioned me to bring a present back from France for our friend Katrina who fed him while we were away. I hope I chose well.

Katrina and Jeremy kindly invited us over for lunch today, and it was nice to sit and chat as it rained and rained and rained outside!

For those interested in baking a gourgere bourguignonne here is Fanny Craddock's recipe:

Just under 1/4 pint milk
1 oz butter
1 teasp salt (I omit this)

Bring to boil slowly, allowing butter to melt.

Toss in (Mrs Craddock's words!) 2 and a half oz flour.

Take off heat and beat until thick and smooth.

Beat in 2 whole raw eggs, one at a time, beating well in between.

Stir in 10z finely diced Gruyere cheese ( or another cheese)

Spread in well-buttered dish. Mine didn't spread, it poured! I used a flan dish.

Sprinkle another 1/2 oz grated cheese on top.

Bake at about 230 degrees C.

The recipe says 25 mins but mine was cooked in 15.

It should rise around the edges like a big Yorkshire pud. Fill the middle with filling of your own choice. I made a sort of ratatouille. Mushrooms in a creamy sauce would also be nice, perhaps with lardons if you eat meat. Or serve with your roast beef!

You could make individual ones, like little Yorkshire puds.
