Saucy lemon pudding

50g butter
125g golden castor sugar
finely grated zest and juice of 2 lemons (or 1 lemon and lime)
2 medium eggs, separated
40g self-raising flour
Half a pint full-fat milk
1tbsp icing sugar

1 Pre-heat oven to gas mark4/C180 degs ( 160 degs in a fan oven)
Grease4x200ml ovenproof dishes. Put butter, sugar and lemon zest into a bowl and cream together till light and fluffy. Gradually whisk in egg yolks, then fold in flour. Stir in milk and the lemon juice.

2 Whisk egg whites till softly peaking, and gently fold into mixture. Spoon into greased dishes. Stand dishes in a roasting tin and pour on boiling water to come half way up sides. Bake for 25 mins till top is golden.
Dust with icing sugar to serve.
