Pineapple carpaccio

In Manchester before flying to Athens tomorrow. We went for dinner at the Malmaison near Piccadilly Station and I had pineapple carpaccio with chilli and mint for dessert. Very nice and I'd try it at home if I could slice the pineapple thinly enough.
