I looked up a recipe on Youtube for Roast Asparagus yesterday. (I might as well give away half my cookbooks)
It suggested splashing on a bit of Balsamic Vinegar, after roasting with smoked sea salt, pepper and olive oil.
I used some delicious pomegranate and fig balsamic. The mix of flavours worked really well. I can recommend it.
I had forgotten how good Asparagus was. It was the first I had cooked this year.
