Hammering it out

Concertgoers at the Bukta festival in Tromsø hit tørrfisk (dried fish) with hammers to tenderise the flesh for eating. Tørrfisk is generally cod, and is cooked before drying naturally in the open air without salting - the oldest method of preserving fish and one that has a long history in the north of Norway. Once dried, the flesh becomes very tough, and in the absence of a pot to slowly steam it in, the best thing to do is to attack it with a hammer - which is of course very appropriate at a rock festival.
