The beginnings of a really nice vegetable soup

Take as many vegetables as possible and dice them: here there are onions, potatoes, courgettes, green beans, mushrooms, carrots and celery. Add a pinch of salt and cover them with boiling water. Simmer once boiling again for 8 minutes.

Remove from heat and add some dried chilli (if that's what lights your fire) and roughly blend in a food processor. Whilst still hot add a hand ful of vermicelli noodles and stir in. The heat from the soup will cook them in about 4 minutes.

Serve with crusty bread.

Left over chorizo or a similar spicy sausage goes really well with this soup.
