Blow Your Head off Chilli Sauce....

4 cups of chillies
2 cups of granulated sugar
2 lbs of tomatoes roasted with olive oil and a touch of sugar and salt
2 large onions chopped
2 cups of white wine vinegar
1 head of garlic
2 teaspoons of mace - Mace is Ace

Cut the green tops of the chillies. Mix with onions, garlic, mace and the roasted tomatoes. Add the vinegar and suger. Bring to the boil, then simmer for around an hour until thick.

Liquidise including the skins and seeds.

Adjust the flavours to suit. You may have to add more vinegar or a touch of water if it too thick.

When cool, place in sterilised jars.
