Twice Baked Goat's Cheese Souffle

Made with Capricorn goat's cheese and served with frisee salad, spinach, roasted red pepper salsa and peashoots.

It is twice baked so that I can serve it quicker to the customer. The Capricorn goat's cheese is a local one and I also put a chunk of it in the middle so that it is not totally fluffy. Any cheese can be used really.
