Vegetables...The Challenge

After I filled up our fridge with fresh produce because K was coming home last week for reading week she arrived with most of the veggie contents from hers. RS has been away. K didn't eat at home all that often last week. And in a day or so we're going away for a little vacation. So salads have been on the menu this week. I guess I'll roast and freeze some red peppers tomorrow.
