Egg Tofu

I didn't know there was such a thing as egg tofu before coming to Thailand. Now cutting open these packages of jelloy egg is just part of making dinner some days.

After carefully squeezing the wiggly yellow stuff out of the package so it doesn't break into weird shapes, we cut it into rounds (like cutting slices of hot dogs) and plopped it into mild broth. We also made pork meatballs and added cabbage to our soup. It was delicious and a good contrast to the make-your-lips-burn-spicy green bean dish we made afterward.

Cooking is one of my favorite things to do with the students at the dorm, so it's a special day when the pots and cutting boards come out. And the great thing is, I always learn something new as we go. :)
