Gooseberry Fool

Firstly thanks to everyone who stopped by my Blip-day blip yesterday. Between the first proper Blip outing for months, comments, hearts, stars and new subscribers it felt like a real birthday. Very sweet of you all, thank you.

Today I give you a mouthwatering dessert. This may not look like much but it was simple and sublime.

Stew one punnet of fresh gooseberries briefly with a bit of sugar.
When fruit still slightly firm strain the fruit from the juice.
Blitz half the gooseberries with Greek yoghurt briefly, leaving gooseberry bits.
Add some brown sugar and butter to the remaining juice.
Reduce as much as you dare without burning.
Dollop the gooseberry butterscotch sauce on top of the fool.
Chill and eat.

It was absolutely delicious.

Use remaining stewed gooseberries to make a crumble for two. Mmmmm ...

I've been having some truly ecstatic eating experiences lately. Rather unexpectedly.
