Late lunch...

Not feeling very well today - decided to make a light lunch...just simple soba noodles with edamame (soybeans). Seasoned with tamari (slightly thicker than soy sauce), ginger, and sesame oil. Also brewed up a glass of ginger tea (fresh ginger / honey).

For those who are not familiar - Soba is a native Japanese noodle made of buckwheat. Buckwheat is high in protein, fiber, minerals, vitamins B1 and B2, antioxidants, and high in rutin (a type of bioflavonoid not found in wheat and other grains).

They are quite delish...definitely one of my favorite noodles...

Would love to make Buckwheat Pancakes soon, never had them...
