Cookies

Had a bit of a relaxing day off today. Did a bit of work on the Taekwon Do website, watched some Treme then made peanut butter cookies. They were bloody good for a first attempt if I do say so my self.

If anyone wants to try them here's the recipe.

Mix 200 grams of caster sugar, 200 grams of soft brown sugar and 225 grams of unsalted butter in a mixer or with and electric whisk until soft and fluffy.

Add two eggs one at a time and mix thoroughly.

Add in 1 teaspoon of vanilla extract and 240 grams of crunchy peanut butter and mix through well.

Add in 340 grams of plain flour, a teaspoon of salt and two and a half teaspoons of bicarbonate of soda and mix to a smooth dough.

Finally mix through 75 grams of dark chocolate finely chopped.

Prepare four baking trays with greaseproof paper and put six evenly sized discs of dough on each.

Bake each tray for about 10 minutes or until the edges start going golden in an oven pre-heated to 170C.

Once they are out the oven leave them on the trays for ten minutes before placing on a wire rack to cool
