Fatayer is a meat pie pastry that can alternatively be stuffed with spinach (sabaneq), or cheese (jibnah). It is part of Middle Eastern cuisine and is eaten in Turkey, Syria, Lebanon, Palestine, Jordan and other countries in the region.

The pastry is actually bread dough. Almost the same as a pizza. So really it is a Middle Eastern calzone!

These ones have roasted crown prince pumpkin, feta cheese and spinach in them. I seasoned them with salt, peppers, cumin, coriander, caraway and fennel.

It gets folded close into a triangle, brushed with water and then cooked in the oven.

I serve it as a vegetarian meal with some salad, humous and olives.
