Gotcha!

Finally grabbed a dragonfly shot that I like...these are fast little suckers!

A few more days of recipes - going to finish out my week of favorites. Today is a cookie recipe - so full of flavor...I get requests for it all the time...delish!



QUEBEC MAPLE PECAN DROPS


COOKIES
1/2 cup (1 stick) unsalted butter - softened
½ cup sugar
3 tbsp maple syrup
1 cup flour
½ tsp baking soda
¼ tsp salt
1 cup quick oats (not old fashioned oats)
½ cup coarsely chopped pecans
¼ cup packaged chopped pitted dates

FROSTING
2 oz cream cheese - softened
2 tbsp butter, softened
2 tbsp maple syrup
1 ½ cups powdered sugar
1/3 cup finely chopped pecans

Preheat oven 350. Beat ½ cup butter and sugar in large bowl. Blend with mixer until creamy. Beat in 3 tbsp syrup. Combine flour, baking soda, salt ; gradually beat into butter mixture. On low speed - beat in oats, coarsely chopped pecans and dates.

Drop dough by rounded tbsp 2 inches apart onto un-greased cookie sheet. Bake 12 minutes or until cookies are golden brown. Let stand on cookie sheet for 2 minutes - then transfer to wire rack and cool.

For frosting - beat cream cheese and 2 tbsp butter in small bowl with mixer until smooth. Beat in 2 tbsp syrup. Gradually beat in powdered sugar until smooth.

Spread frosting over cooled cookies - top with finely chopped pecans.
