Creamy sweet potato noodles

A dish thrown together from what was in the fridge.

I was testing out a new creamy salad dressing made with tahini, lime juice, garlic and nutritional yeast. Even though I only made a third of the quantity it yielded enough to last me three meals.

The rest of the dish is simply composed of kale, marinated shitake mushrooms and avocado. The noodle strands (or spaghetti, if you prefer) is sweet potato.

A hearty dish that stands up to the frosty weather.
