Potato salad

I think I am starting to see the light.....

Made this lovely salad for dinner - inspired by the broccoli gribiche from Heidi Swanson - pan seared smashed fingerling potatoes with garlic, and tossed with blanched green beans, celery, red peppers, onions, boiled egg and capers. All the flavors melded together nicely with the heat of the potatoes and the dressing. Yummy.

Three more days and I'm off to Boulder, CO with by sister-in-law K for a girls weekend! Yay! Perfect timing.
