Probably The Best Tomato Sauce Recipe in the World

Were in the middle of a tomato glut at the moment so it was time to make Probably The Best Tomato Sauce Recipe in the World Ever.

Around 2 kilos of tomatoes - we picked 2.5 this morning.
Good glug or two of olive oil.
Loads of garlic.


Half the tomatoes and stick them in a roasting tray, add as much garlic as you fancy.
You can never have too much garlic.
Glug in lots of olive oil.
You can't have too much olive oil.
Mix it all together with your hands
Roast in the oven at 180C until the're starting to dry a little - they can burn very easily.
Remove from the oven and let cool.
Push the pulp through a sieve.

You've now got a very concentrated sauce which will freeze remarkably well. Add some chopped basil before you use and maybe a touch of sugar, salt and pepper.
Just a dolllop on some pasta with chopped parsley and a sprinkle of parmigiano and you have Probably the Beat Dinner In The World.

Knocks all your bottled stuff into a cocked hat.
