"Poached Eggs on Toast"

In celebration of "Meals on Toast Week", (beans on toast, hoops on toast, spaghetti bolognese on toast...), I give you one of my favorites, poached eggs on toast.

Very quick and easy to make, healthy and fabulous to eat. Who wants fancy schmancy eggs benedict smothered in that congealed artery hardening hollandaise sauce, when they can have something as simple and delicious as this?
