Trout, straight from the water of the local fishery and into the oven, with a few minutes to snap a shot.  I could have done something more inventive but hey ho.  
These were particularly dark in colour and the red very intense as they were kept in a shaded pool. Their meat, in comparison, is almost white. These farmed fish are fed crustaceans for a few weeks, before they are sent off to stock fish ponds, which turns their meat pink.  It would seem that fishermen don't believe they are getting the real deal if the colour is natural.
