Roasted Summer Vegetables
Fridays are my day off so I can think about a more creative evening meal than on a work night. I was going to publish a still life arrangement of the whole vegetables before I prepared them but then I decided the chopped off tops looked more interesting. I am roasting egg plant, capsicum, red onions and courgettes drizzled with olive oil. Near the end of the cooking time I will add Feta cheese.
