chilli days

& it continues...with the limited access to the borrowed thermomix & work this afternoon - I'm on a mission to get the chillies converted.

Sambal Oelek & some sweet chilli sauce.  I think the trick to getting this right is to understand the different chilli flavours. The chillies i'm playing with just seem to burn.

Also, don't rub your eye in the morning after a late night chilli cook - it will still hurt.
Look forward to getting my machine back & learning how to manage & balance the flavours that can make chilli sing.
