Rhubarb Meringue Pie

Last week I bought some stunningly pink forced rhubarb on Salisbury market and was keen to find something special to do with it. Fortuitously, a friend then posted a photo on Facebook of a rhubarb meringue pie that she had mad - Bingo! The recipe is from How to Eat by Nigella Lawson. It's a bit 'involved' with several stages, including making the pastry, but definitely worth the effort.
