Fridge Soup

Fridge Soup, for those unfamiliar with the concept, is what you make from those odds, ends and leftovers that have been hanging around in your fridge for a while waiting for you to think of something to do with them.

For this one, I used a pack of Jerusalem artichokes (best before 30 Jan 2015 - but they'd only started to sprout a bit and were fine once peeled) and the leftovers from a rabbit casserole, consisting of some good stock, celery, carrots and a couple of prunes. Fry an onion, add some more vegetable stock and the result was a beautifully smooth, deep-flavoured soup.

I'll never be able to recreate it exactly, as it was a 'throw it together and see what happens' job - but that's all part of the fun! And after a week of being out of sorts, recovering from flu and having to cancel plans as a result, it was a great pick-me-up.
