for Staffordshire Oatcakes

The Staffordshire Oatcake is particularly associated with the area around The Potteries but it can be found further north in to Cheshire.

It was there as a lad that I acquired a taste for these beauties.  They are not at all like the Scottish biscuit of the same name.

These are large, soft and not unlike eating soggy blankets.

They are  delicious and many years I ventured in to the secret world of oatcake making.

So here you see a batch in the course of manufacture.

The recipe starts with fine oatmeal.........................
